You open the wine list at Ambar expecting the usual suspects β a Cab, a Pinot Grigio, maybe a Malbec if they're feeling adventurous β and instead you get Serbia, Macedonia, and Slovenia staring back at you. It's a genuine gut-check moment. This is not a restaurant that phoned in its wine program.
The list leans hard into the Balkans, and that's exactly the right call. Serbian Prokupac brings a rustic, earthy red that most Arlington diners have never encountered; Macedonian Vranec shows up with dark fruit and grip that can handle the grilled meats; and Slovenian Rebula offers a textured white with enough character to hold its own against ajvar and kajmak. The natural wine thread running through the list gives it a current, intentional feel rather than a dusty regional novelty act. The geographic range is tight by design β you're not getting Burgundy or Napa here β but within that lane, the curation shows real conviction. The main gap is depth: beyond the headline grapes, the list doesn't go very far down the rabbit hole.
Eight to twelve options by the glass is a respectable spread for a place built around shared plates and high table turnover. The glass program mirrors the bottle list's Balkan focus, which means you can actually explore the region pour by pour without committing to a full bottle of something unfamiliar. At $10β$16 a glass, the pricing is reasonable for the Arlington market.
Macedonian Vranec β $40β$50/bottle
Vranec is an underdog grape punching well above its price β think big, dark, slightly tannic red that holds its own against anything France or Italy sends at twice the cost. At Ambar's bottle pricing it's a genuinely strong deal.
Slovenian Rebula
Most tables walk past this one and order something they already know. Don't. Rebula is a skin-contact-adjacent white with real texture and an oxidative edge that makes it one of the more interesting pours on the list β and it's not showing up on wine lists two miles away.
Balkan-region natural wines (generic label selections)
When the natural wine picks aren't named or sourced with any specificity on the list, you're rolling the dice. The concept is right but the execution can be inconsistent β ask your server what's actually in stock before you commit, or stick to the named regional varietals where the list has more backbone.
Serbian Prokupac + Balkan kebab and grilled meats
Prokupac has an earthy, slightly gamey quality that mirrors the char and spice on the kebabs β it's a regional match that actually makes sense beyond the gimmick of ordering local. The wine's acidity cuts through the fat; the fruit holds up to the smoke.

Ambar is the rare Arlington restaurant where the wine list is actually part of the experience, not an afterthought. If you're even a little curious about what the Balkans are doing with grapes, this is an easy yes.

Carlyle won't change your relationship with wine, but it won't ruin it either β and on Tuesday, when everything on the bottle list is half off, it briefly becomes one of the better deals in Shirlington. Come for the prime rib, order the Jordan, and call it a good night.
