Walking into VINCA, you get the sense that someone here actually cares about the list β not because it's sprawling or showy, but because the prices feel honest in a way that most Pearl Street spots don't bother with. A Modern European wine bar on Boulder's main drag could easily coast on tourist margins. VINCA doesn't.
The list leans European in spirit but isn't afraid to pull in New World producers when they earn their spot β Evening Land's Eola-Amity Chardonnay and Rancho Las Hermanas Sta. Rita Hills Pinot Noir are legitimate picks, not just California filler. Italian representation comes via Antinori's Villa Toscana and Michele Chiarlo's Barbera d'Asti, giving the list some regional credibility to match the kitchen's European focus. What's missing is depth β this feels like a tightly curated starting point rather than a fully built-out cellar, and there are gaps in the Old World coverage you'd hope to see from a restaurant billing itself as European-inspired. But the selections that are here show intent, and that counts for something.
By-the-glass specifics aren't fully documented, but given the price points sampled β all landing between $25 and $31 β this looks like a list built for glass pours rather than bottle-service theater. If the kitchen is running $21 entrees, a $27 glass of Barbera d'Asti fits the room. We'd love to see more rotation here, but the current slate is approachable without being dumbed down.
Rancho Las Hermanas Sta. Rita Hills 2022 Pinot Noir β $31
At 19% over retail, this is practically a favor. Sta. Rita Hills Pinot at this price β from a producer doing real work in the appellation β is a deal you'd be foolish to pass on.
Michele Chiarlo 'Le Orme' Barbera d'Asti Superiore 2022
Most tables will reach for the Cab or the Sauvignon Blanc and never look twice at this. That's their loss. Barbera d'Asti has the acidity to cut through rich pasta dishes and enough fruit to keep skeptics happy β it's the most food-friendly bottle on the list.

Wait β we love the wine, but the 50% markup is the steepest on the list. If you're bottle-sharing and watching the math, note that you're paying the most over retail here compared to every other option. Worth it for the right meal, but eyes open.
Antinori Villa Toscana Tuscany 2022 + Spaghetti alla Bolognese
A Tuscan red with a Bolognese is almost too obvious β but obvious because it works. The Villa Toscana's structure handles the richness of the meat sauce without bullying it, and you're staying in the same culinary zip code the dish was born in.
π² The Bottom Line
VINCA is doing something rare on Pearl Street: keeping markups honest while building a list that actually reflects the restaurant's identity. It's not a deep cellar, but what's here is well-chosen and well-priced β send a friend, order the Pinot, eat the pasta.
University Hill Β· Boulder Β· Spanish- and Moroccan-inspired tapas and small plates
Cafe Aion's wine list is solidly built around its concept, and the daily 50% off bottles deal from 3pm to close is one of the most generous standing wine programs in Boulder β full stop. The markups at full price are steep enough to give you pause, so do yourself a favor and show up before dinner.

Boulder Social is a solid neighborhood hangout where beer is the move and wine is an afterthought priced accordingly. If it's Tuesday, half-price bottles change the math β otherwise, stick to the taps.

Via Perla isn't trying to be a wine destination β it's trying to be a great Italian osteria, and the wine list serves that goal honestly. Come for the pasta and the Barolo, don't overthink it.

Carelli's is a dependable neighborhood Italian with a wine list that matches its ambition β comfortable and crowd-pleasing, not adventurous. Send your friend here if they want a nice Italian night and a bottle of Antinori; steer them elsewhere if they're hoping to find something they've never tried before.

Gemini is the kind of place Boulder doesn't have enough of β a restaurant where the wine list actually reflects the food and the region it's inspired by. If you eat Spanish, you should be drinking Iberian, and Gemini makes that case effortlessly.

Rincon Argentino is a genuinely good casual spot for Argentine food, but the wine list is a missed opportunity β overpriced supermarket bottles with no rotation, no discovery, and no apparent effort. Grab a glass with your empanadas, but don't build a night around the wine.
