The wine list at Twenty One Steak reads like a greatest hits of the American steakhouse canon — Caymus, Silver Oak, Duckhorn, Veuve. It's confident, it's polished, and it's clearly built for the occasion diner who wants something recognizable with their ribeye. What you won't find is much adventure, but that's not really the point here.
The list runs 100-200 bottles deep with a firm lean toward California Cabernet and Napa heavyweights — Caymus, Silver Oak Alexander Valley, Darioush, and Far Niente all make appearances. There's a credible nod to Italy with Gaja Barbaresco and Antinori Brunello di Montalcino, which elevates the list above pure crowd-pleaser territory. The Rhône shows up with Jean Luc Colombo's Cornas Les Terres Brulées, which is genuinely interesting and probably gets overlooked most nights. Gaps exist on the value end — this list skews toward trophy bottles and doesn't do much for the diner who wants something compelling under $60.
Twelve to twenty pours by the glass is a solid spread for a steakhouse in Pueblo — they're clearly trying. The glass program appears anchored in familiar territory: expect Chardonnay, Cabernet, and a Champagne option like Veuve Clicquot Yellow Label. We'd love to see more rotation and adventurous picks here, but for a special-occasion restaurant in this market, it gets the job done.
Jean Luc Colombo Cornas Les Terres Brulées — null
Cornas is one of the Northern Rhône's most undersung appellations — serious Syrah with dark fruit, smoke, and grip. On a list full of Napa Cab markups, this is likely the most interesting bottle at a relatively friendlier price point. Order it with the ribeye and don't look back.
Gaja Barbaresco
Most tables here are going straight for the Silver Oak or Caymus — which means this Gaja Barbaresco sits quietly on the list waiting for someone who knows what they're doing. It's one of the most iconic names in Italian wine, built for red meat, and a completely different experience from the Napa Cab parade. If you're celebrating something real, this is the move.
Veuve Clicquot Yellow Label
Veuve Clicquot Yellow Label is fine Champagne. It's also one of the most marked-up bottles in the country the moment it lands on a restaurant list. You're paying for the orange label recognition here, not the wine. If you want bubbles to start the night, push back and ask what else they have.
Darioush Cabernet Sauvignon Napa Valley + Hand-cut ribeye
Darioush is a structured, full-bodied Napa Cab with enough dark fruit and tannin to stand up to the fat and char on a well-marbled ribeye. It's the kind of pairing this list was built for — and for once, the classic call is actually the right one.

Twenty One Steak is the best wine program in Pueblo, which is a real thing worth saying out loud. The markups sting and the list plays it safe, but there are genuinely good bottles here if you know where to look — and for a special night on the riverwalk, it delivers.
