The list leans hard into Italy, California, and France, which fits the kitchen's wood-fired, pasta-forward personality. It's not a deep-cellar situation, but it's a genuinely solid range for a hotel dining room in Milwaukee — you're not just staring at Meiomi and Josh Cellars. The Mediterranean throughline gives the list coherence that a lot of restaurant lists lack. That said, don't expect to go hunting for obscure Etna Rosso or Jura whites — this is curated for a broad audience, and it plays to the crowd more than it challenges it.

Most tables here are ordering California bubbles and moving on. Collet is a cooperative house out of Aÿ with serious Champagne credentials that flies under the radar — it's not Krug, but it's the real thing. If you're going to pay Champagne prices, at least drink actual Champagne.

A $25 retail bottle hitting $60 on the list is a 140% markup on a wine that was never meant to carry that kind of weight. Mumm Napa is a perfectly pleasant party sparkling — it's not a $60 bottle anywhere else on earth. Pass.
Collet Brut Aÿ-Champagne FR + Charcuterie
Salt, fat, acid. The Collet's bright acidity and fine bubbles cut through cured meats and rich charcuterie boards in a way that California bubbles at this price point just don't. It's the move if you're starting with a spread at the bar.
