Wingman Metrics
The list arrives looking like a love letter to Napa Valley, and honestly, the room earns it — clubby, underground, the kind of place where someone's definitely ordering a Caymus without looking at the price. It's polished and intentional, built for the crowd that flies into Jackson Hole and wants big American reds to match big American steaks. No surprises here, but no embarrassments either.
The 150-plus selections lean hard on Napa and Sonoma, with Bordeaux and Burgundy showing up to add some old-world credibility. The California anchor lineup — Caymus, Jordan, Silver Oak, Duckhorn, Opus One — reads like a greatest hits of safely recognizable labels, which is exactly what the clientele wants. Burgundy and Bordeaux sections likely exist to give the sommelier something to talk about, but we'd wager the vast majority of bottles leaving the cellar are California reds. The geographic range is narrower than the list size suggests; this is a steakhouse wine list, not a wine bar wine list.
With 12 to 20 pours available, the by-the-glass program is one of the stronger aspects here — enough options that you're not stuck choosing between house Chardonnay and house Cab. Expect the usual suspects in the pour lineup, heavy on California producers with prices that reflect the zip code. Rotation doesn't appear to be a priority, so don't count on anything too adventurous showing up mid-season.
Jordan Cabernet Sauvignon — null
Among the recognizable names on this list, Jordan consistently punches above what restaurants charge for it relative to retail. It's the pick when you want a proper Sonoma Cab without walking into Opus One territory on the bill.
Duckhorn Merlot
Everyone at this table is ordering Cab, which means the Duckhorn Merlot gets overlooked constantly. It's a serious, structured wine that holds its own against a ribeye and typically comes in under the Cab tier on pricing — that's the move.
Opus One
Opus One is a genuinely great wine, but at a high-end resort steakhouse in Jackson Hole, the markup on something this recognizable is going to be eye-watering. You're paying for the label twice — once at the winery and once for the privilege of ordering it here.
Silver Oak Alexander Valley Cabernet Sauvignon + Dry-aged ribeye
Silver Oak Alexander Valley is built for exactly this moment — it has enough fruit weight to stand up to dry-aged beef fat and just enough structure to cut through without overwhelming the meat. Classic pairing for a reason.
✔️ The Bottom Line
The Restaurant at White Buffalo Club is exactly what it wants to be: a confident, Napa-forward steakhouse list in a room where the wine is expected to be as serious as the beef. The markups sting and the adventurous drinker won't find much to explore, but if you're here for a big California red with a big steak, the cellar and the staff will take care of you.
