Walk into Substrate and you know immediately this isn't your grandfather's wine bar. Vinyl spinning, saltines on the bar, and a list that reads like a natural wine nerds' group chat made physical. This is what happens when serious wine knowledge meets zero pretension.
The list skews heavily natural and low-intervention, with a clear bias toward small producers doing interesting things. You'll find skin-contact wines from Georgia (the country, not the state), Pet-Nats from the Loire, and obscure Italian field blends that sommeliers hoard. The vermouth and amaro selection runs deeper than most Charlotte restaurants' entire wine programs. It's not exhaustive, but every bottle feels intentional—like someone actually tasted it before adding it to the list rather than ordering from a distributor's greatest hits.
Twelve-plus pours by the glass is solid for a spot this size, and they rotate regularly based on what's drinking well. Expect natural wines that might scare off Corporate Wine Drinkers—think cloudy orange wines, funky Loire Cabernet Franc, and skin-contact Friulano.
