Eight hundred to twelve hundred selections anchored by some of the most exciting Spanish producers anywhere in the U.S. — Vega Sicilia Único, Álvaro Palacios' L'Ermita, Pingus from Ribera del Duero, and Raúl Pérez's Bierzo work all show up here, which is genuinely rare outside of a Spanish specialty house. Raúl Pérez Bierzo
Most guests are fixated on the Vega Sicilia or the DRC — understandably — but Raúl Pérez's Bierzo selections are where the real intrigue lives. Mencía from the right producer drinks like a Spanish Burgundy and Pérez is one of the most interesting winemakers working in Spain right now. If you get a chance to request a pour or go off-pairing for a bottle, this is the move.
Domaine de la Romanée-Conti Burgundy
It's on the list, it's extraordinary wine, and nobody's arguing otherwise — but at a restaurant where the pairing program already runs $350 to $600+ per person, adding DRC by the bottle is a financial commitment that's going to overshadow everything on the plate. The Spanish bottles at a fraction of the price will actually complement Zabala's cooking more naturally anyway.
Álvaro Palacios L'Ermita + Ibérico Ham Course
L'Ermita is Grenache from old Priorat vines with enough mineral intensity and dried-fruit concentration to stand up to the fat and depth of Ibérico ham without overwhelming it. It's also one of the most Spanish things you can pour, which makes matching it to one of the most Spanish ingredients on the menu feel less like a coincidence and more like the whole point of this place.
