California dominates the bottle list, with heavy hitters like Sea Smoke and Flowers Chardonnay from Sonoma Coast leading the whites — smart calls for a raw bar. France shows up in the right places: Alphonse Mellot's La Moussière Sancerre and La Chablisienne's Vaillons Chablis 1er Cru are exactly what you want in your hand while shucking through a dozen oysters. The red side is serviceable but generic — Silver Oak, Orin Swift Machete, J. Davies Cab — crowd-pleasing bottles that feel more hotel bar than oyster bar. Sancerre at a seafood bar is never a mistake, and Mellot's La Moussière is one of the more reliable, food-friendly expressions in that appellation. It's the natural counterpart to everything on this menu and likely the most honest price-to-pleasure ratio on the list.

A Gaja-owned Super Tuscan at a Portsmouth oyster bar? Nobody's ordering it, and that's a shame. The Magari is a Cab-Merlot-Cab Franc blend with enough structure and depth to reward someone willing to step outside the 'whites with fish' default — especially if you're going grilled or roasted.
Silver Oak Cabernet Sauvignon Alexander Valley 2020
Silver Oak is fine. It's also everywhere, marked up to the moon, and completely out of place at an oyster bar. You're paying restaurant premium on a bottle you could find at any wine shop in America. Save it for a steakhouse.
La Chablisienne Vaillons Chablis 1er Cru 2019 + Raw oysters
Premier Cru Chablis and raw oysters is one of the great unremarkable miracles of wine and food. The Vaillons has that signature flinty, saline edge that mirrors the brine in the shell — it doesn't compete with the oyster, it completes it.
