Revival is a genuinely charming counter-service spot doing real work in East Waco's community fabric — women-owned, locally sourced, neighborhood-first energy. The wine list, however, reads like it was assembled in about ten minutes. Four unlabeled house bottles at $25 each is less a wine program and more a placeholder.
There are no producers named, no vintages listed, no regions called out beyond a vague California and Texas nod. The entire list appears to be four generic house pours — rosé, white, red, and chardonnay — which, yes, means chardonnay is apparently a separate category from 'white wine' here. If there are Texas bottles on this list doing something interesting, they're buried under anonymous labeling that gives you zero reason to explore. A wine list should make you curious; this one makes you order a beer.
The by-the-glass program mirrors the bottle list almost exactly — because the bottle list basically is the by-the-glass list. There's no meaningful rotation, no seasonal pours, and no signal that anyone is tending this section with any intention. For a spot that clearly cares about its food sourcing, the glass pours feel like a missed opportunity to spotlight Texas producers.
House Rosé NV — $25
At a 67% markup it's the least egregious option on the list, and rosé is the safest bet for the casual, bright-lit counter-service vibe here. Damning with faint praise, but it's the pick.
House Red NV
With a 79% markup it's not exactly a deal, but if Revival is actually sourcing from a Texas producer here and just not saying so, this could be more interesting than it looks on paper. Ask before you order — the answer might surprise you.
House White NV
A 108% markup on a $12 retail bottle is the worst math on the list. Whatever this is, it's not worth $25 at a counter-service cafe with no context given about what you're actually drinking.
House Rosé NV + Whatever's fresh off the counter that day
Revival leans into Texas-sourced, simple, generous food — and a chilled rosé is the one bottle here that won't fight anything on the menu. Low risk, decent reward.
❌ The Bottom Line
Revival deserves your business for a dozen reasons — the wine list just isn't one of them. Order something local if they have it, otherwise grab whatever's coldest and focus on the food.
