Walk into a P.F. Chang's expecting the wine list to be an afterthought and you won't be wrong — but you won't be entirely right either. Twenty-seven labels is more than most chain restaurants bother with, and there are a few real names buried in here. The Wednesday half-price bottle deal, though, changes the entire calculus.
The list reads like a greatest hits of American restaurant wine: Rombauer Chardonnay, The Prisoner Red Blend, Caymus-Suisun, Stags' Leap Cab. Safe, recognizable, and marked up accordingly. Most people reaching for a California red here will grab The Prisoner or the Stags' Leap Cab out of habit. The Walking Fool is the more interesting pour — Suisun Valley is still flying under the radar, and this is a rich, food-friendly red blend that most diners will walk right past. Worth trying, especially at half price.
Moët & Chandon Impérial Brut, Champagne
Moët is fine, but it's one of the most marked-up bottles in any restaurant in America. At full price here, you're paying a significant premium for a Champagne that's available at every grocery store. Save it for Wednesday or skip it entirely.
Cloudy Bay Sauvignon Blanc, Marlborough + Chang's Lettuce Wraps
The bright citrus and green herb notes in the Cloudy Bay cut right through the richness of the chicken and hoisin filling without steamrolling the delicate crunch of the wrap. It's actually a textbook match that the menu accidentally gets right.
