You walk into a hotel restaurant in Spokane Valley and fully expect a list of Kendall-Jackson and maybe a Meiomi if they're feeling adventurous. Instead, you're handed a 450-bottle deep list that reads like a Washington State greatest hits album with some serious European bench depth. It stops you mid-reach for the cocktail menu.
The Pacific Northwest representation here is genuinely impressive — Quilceda Creek, Leonetti, DeLille, and Cayuse are not names that end up on hotel restaurant lists by accident. Someone at this place cares. Beyond Washington and Oregon, there's enough California, French, and Italian range to satisfy the table that can't agree on a region, and the price spread from $45 to well north of $200 means you can go celebratory or sensible without feeling boxed in. The one gap we'd flag is that with this much Washington Cab and Syrah muscle, some balance from lighter reds or more white variety would round out the depth even further.
Fifteen to twenty pours by the glass is a healthy number, and at $12–$22 a pour the range doesn't feel punishing. The Eroica Riesling collaboration between Chateau Ste. Michelle and Dr. Loosen showing up here by the glass is a win — it's the kind of wine that converts people who think they don't like Riesling. Rotation details aren't crystal clear, but the range at the top end suggests the glass program gets real investment.

Quilceda Creek Cabernet Sauvignon

Max at Mirabeau is the kind of wine list that has no business being this good in this zip code, and that's entirely a compliment. If you're in Spokane and you care about what's in your glass, this is your stop.
