A 400-600 bottle list at a Pan-Asian fusion spot in suburban Las Vegas is not what you expect walking in β but here we are, and it's serious. The France and California axis is strong, and the presence of sommelier Roy Arias means someone is actually minding this cellar. It earns its 2025 Wine Spectator Best of Award of Excellence the old-fashioned way: with real bottles and real knowledge behind the bar.
France and California are the twin pillars here, and they're built with weight β Chateau Margaux, Chateau Latour, and Domaine de la Romanee-Conti anchor the Old World side, while Screaming Eagle, Shafer Hillside Select, Joseph Phelps Insignia, and Opus One fly the California flag with zero apologies. Kistler Chardonnay adds some welcome nuance beyond the Napa Cab parade, and Louis Jadot Burgundy selections round out the French chapter for those who don't need a trophy bottle. The list skews heavily toward the high end β this is a Las Vegas restaurant, after all β but the range within that world is genuinely impressive. Gaps exist in natural wine and emerging regions, but nobody coming to Jing is hunting for pΓ©t-nat.
With 20-35 by-the-glass options, the pour program is one of the stronger ones on this side of the Strip. The depth here matters β you're not stuck choosing between two anonymous Cabs and a grocery store Chardonnay. We'd lean on Roy Arias to steer you toward whatever is showing best on any given night.

At the entry price point of this list, Jadot's Burgundy selections offer real Pinot Noir character and Old World credibility without requiring a second mortgage β a practical anchor in a list that climbs fast.
Kistler Chardonnay
Everyone's eyeing the Screaming Eagle, but Kistler is quietly one of California's most compelling Chardonnay producers. On a list dominated by red trophy bottles, this is the white worth ordering.
Caymus Vineyards Special Selection Cabernet Sauvignon
Caymus Special Selection is a perfectly fine wine, but in a Las Vegas restaurant context the markup is punishing and the bottle has become a status order more than a value one. With Shafer Hillside Select and Insignia on the same list, your money works harder elsewhere.
Kistler Chardonnay + Pan-seared sea bass
Kistler's richly textured, restrained California Chardonnay has the weight to hold up to seared fish without steamrolling it β the acidity cuts through the fat and the whole thing just clicks.

Jing is a genuine surprise β a serious, cellar-deep wine program hiding inside a Pan-Asian fusion concept in a Las Vegas suburb. If you're in the Summerlin corridor and care about what's in your glass, this list is worth the trip.
