His philosophy is to pair each wine with a specific dish, choosing red over white when the flavor profile demands it regardless of convention. The non-alcoholic pairing program runs in parallel with artisanal mocktails designed per course, drawing nine requests per night. The 5-course Petit Experience at $150 all-inclusive is the budget-friendlier entry. The Gold Experience adds black car service, early access, and a nightcap at sister restaurant Southbound.
