The wine list at Gibsons Italia arrives with the confidence of a restaurant that knows exactly who it is β white tablecloths, West Loop energy, and a book that means business. Five hundred-plus selections anchored in Italy, California, and France tell you immediately that someone here actually cares. This isn't a steakhouse wine list that phoned it in; it's the main event.
Italy is the obvious star: Sassicaia, Ornellaia, Tignanello, Biondi-Santi Brunello, and both Gaja and Giacomo Conterno representing Barolo at the top of their game. California holds its own with Ridge Monte Bello, Opus One, Caymus, Silver Oak, and Stag's Leap in the mix β the heavy hitters are all accounted for. France shows up with ChΓ’teau Margaux and Dom PΓ©rignon anchoring the prestige end. The list earns its Wine Spectator Best of Award of Excellence honestly β this has been a serious program since 2018 and it shows in the depth and curation.
Twenty to thirty-five pours by the glass is a real commitment, and Cakebread Chardonnay at $28 a glass sets the tone β these aren't afterthought pours. The rotation appears to track quality rather than just clearing inventory, which is exactly what you want from a room with two named sommeliers on staff.
Far Niente Cabernet Sauvignon Napa Valley 2021 β $95/bottle
Far Niente Cab at $95 is one of the more reasonable entry points on a list that quickly climbs into the stratosphere. It's a polished, full-throttle Napa Cab from a producer who never mails it in β and at this price point it won't require a second mortgage.
Ridge Vineyards Monte Bello
In a room full of Opus One drinkers and Sassicaia loyalists, Monte Bello tends to get overlooked β which is honestly criminal. Ridge's flagship is one of California's great age-worthy wines and it'll outperform plenty of bottles on this list that cost twice as much. If the sommelier spots you eyeing it, they'll back you up immediately.
Opus One Napa Valley 2020
At $750 a bottle, Opus One is doing a lot of brand work for that price tag. It's a great wine, but it's also one of the most marked-up bottles in any restaurant in America β retail sits well below what you're paying here. The Ridge or even a well-chosen Barolo from this list will give you more wine for the money.
Gaja Barbaresco 2021 + Bone-in Filet Mignon
Gaja's Barbaresco brings enough structure and acidity to cut through the richness of the filet without bullying it β it's the rare Italian red that matches big beef without losing its elegance. At $285 it's a splurge, but this is the pairing that makes the whole table go quiet for a moment.

Gibsons Italia is the real deal β a deeply stocked, expertly staffed wine program in one of Chicago's best dining rooms. Markups run steep at the top end, but if you know where to look (and the sommeliers will help), this is a list worth getting lost in.
