You walk into Don Pepe's expecting a margarita menu the size of a short story and you get exactly that — but tucked in there is a wine list that swings harder than you'd anticipate. The sparkling game here is genuinely surprising for a Tex-Mex cantina in Central McAllen. Nobody comes here thinking wine, which is exactly the kind of low-bar setup where you can win big.
The list leans heavily on crowd-pleasing names from Italy, Spain, France, and California — nothing that's going to make a serious collector weep with joy, but nothing embarrassing either. What's notable is the sparkling lineup: Canella Prosecco, Villa Conchi Brut Reserva, and Laurent-Perrier Brut NV sitting on the same menu as enchiladas is either a fever dream or a genuinely fun move. The still wine selections play it predictably safe with familiar labels, and there's no real regional depth beyond the bubbles. Don't come here looking for a Ribera del Duero rabbit hole — this isn't that place.
The by-the-glass program appears built around approachability, with an estimated eight to twelve options that skew toward sparkling and easy-drinking whites and reds. The Michelle Brut Rosé from Washington shows up as a glass-pour-friendly option that actually earns its place. Rotation doesn't seem to be a priority — this list has the feel of something set once and revisited rarely.

Washington state fizz that punches well above its cantina-list price point. Dry, food-friendly, and genuinely good with anything salty coming off the grill.
Villa Conchi Brut Reserva
A Cava from Spain that most tables will walk right past in favor of the Moët. That's their loss — this is a proper méthode traditionnelle sparkler at a fraction of the Champagne price, and it holds its own.
Moët & Chandon Brut
Moët at a Tex-Mex cantina means you're paying a luxury markup for a Champagne that's already a volume brand. Unless you're celebrating something that demands a recognizable label on the table, the Villa Conchi does the job for considerably less.
Canella Prosecco + Fajitas
The bright acidity and light effervescence of the Prosecco cut right through the char and fat from the fajita plate. It's casual, it's fun, and the bubbles reset your palate between bites of grilled meat and tortilla.

Don Pepe's isn't a wine destination — it's a margarita-and-fajita operation that quietly stocked its bar with some solid sparkling options nobody expects to find. If you're in the mood for bubbles with your Tex-Mex, you could do a lot worse.
