The list is tidy, approachable, and designed to move product — which it does effectively. It's not trying to be a serious wine destination, but it's not pretending to be something it isn't either.
The list leans heavily on Cooper's Hawk's own portfolio, spanning California, France, Italy, Spain, Australia, and Mexico, but don't expect deep regional exploration or grower-producer finds. What you get is a well-organized lineup of familiar varietals — Sauvignon Blanc, Pinot Gris, Riesling, Chardonnay, Tempranillo, Pinot Noir, Cabernet Sauvignon — that covers the crowd-pleasing bases without any real surprises. The Lux tier wines are the flagship pitch, essentially the restaurant's answer to a reserve program, though at 57-60% markups over retail, you're paying a meaningful premium for the house brand. At $47.99 for a bottle you can buy for $30 at the winery's own retail, the math just doesn't work. You're paying for the experience of drinking it here, and that's a 60% premium for ambient lighting.
Cooper's Hawk Pinot Gris + Pretzel-Crusted Pork Chop
The slight richness and off-dry edge of the Pinot Gris cuts through the saltiness of the pretzel crust while complementing the pork without overpowering it — one of the more intuitive pairings on this menu.
