The wine list here reads exactly like the room looks — polished, confident, and playing it very safe. It's a greatest-hits collection built for corporate expense accounts and first dates where nobody wants to argue about grapes. That's not a dig, but it's not a compliment either.
The 100-to-200 label list leans hard on Napa and Sonoma, which makes sense for a steakhouse crowd but leaves zero room for adventure. You'll find the expected suspects — Caymus, Silver Oak, Jordan, Rombauer — names that read well on a menu and carry zero risk of a confused table. There's a nod to Texas Hill Country, which is a nice local touch, but it feels more like a checkbox than a real commitment to the region. If you came hoping to find a Willamette Valley Pinot or a Rhône-style something-or-other, keep walking.
The glass program runs 12 to 20 options and prices land between $12 and $20, which is about what you'd expect for a Las Colinas steakhouse. Rombauer Chardonnay almost certainly anchors the white side of the menu, and that's fine — it's crowd-pleasing for a reason. Don't expect much rotation; this list feels like it gets updated roughly never.
Jordan Cabernet Sauvignon — $65
Jordan consistently punches above its retail price in terms of polish and food-friendliness. If the markup here is anywhere close to fair, it's the most honest bottle on the list for a steak dinner — structured, not overblown, and it won't embarrass you at a business dinner.
Texas Hill Country selection
Most tables will walk right past whatever Texas wine is on this list and grab the Caymus out of habit. Don't. A local Hill Country red with a ribeye is a genuinely good combination, and it's the one moment this list shows a personality of its own.
Caymus Cabernet Sauvignon
Caymus is fine wine, but at steakhouse markup it's almost certainly sitting at $90-plus for a bottle that retails around $75. You're paying a premium for a label everyone recognizes, not for quality you can't get elsewhere on this list for less.
Silver Oak Alexander Valley Cabernet Sauvignon + Hand-cut ribeye
Silver Oak Alexander Valley runs warmer and more approachable than its Napa sibling — more fruit, softer tannins — which makes it a natural match for a well-marbled ribeye without the austerity of a bigger Cab shutting down the fat on the plate.

Cool River Café is a reliable wine stop if you already know what you want and aren't looking to be surprised. Send your friend here for a steakhouse night out — just tell them to skip the Caymus and order the Jordan.
