The wine list at Ciopinot reads like a love letter to the Central Coast — which makes sense given you're sitting squarely in the middle of some of California's best wine country. It's not a massive book, but what's here feels intentional, with a clear geographic point of view that actually matches what's on the plate.
The list runs 60-plus bottles deep with a strong Central Coast lean — Talley, Laetitia, Bien Nacido, Claiborne & Churchill all make appearances, and that's the right neighborhood for a seafood-forward restaurant in SLO. Pinot Noir and Chardonnay dominate, which is exactly what you'd want given the Arroyo Grande and Santa Maria Valley terroir being showcased. There's less adventure outside California, and if you're hunting for a Muscadet or an Aligoté to go with your oysters, you'll be disappointed. But as a regional showcase, it holds up.
Somewhere between 10 and 16 pours by the glass, which is a respectable spread for a restaurant of this size. The selection tracks the bottle list — Central Coast Pinot and Chardonnay heavy — so you're not getting a radically different experience in either direction. No obvious rotation program in place, which means what you see is probably what you'll see next time too.
Claiborne & Churchill Dry Riesling — null
Claiborne & Churchill's Dry Riesling from the Edna Valley is one of the most undervalued whites on the Central Coast, and it's a natural fit with this seafood-heavy menu. If the pricing is fair relative to the rest of the list, this is the move — brisk acidity, zero oak, and it loves anything from the sea.

Most tables at a seafood restaurant in California are going to default to Chardonnay without a second thought. The Claiborne & Churchill Dry Riesling is the smarter call — it's made right down the road in Edna Valley, it's a genuinely food-friendly wine, and almost nobody orders it. Their loss.
Bien Nacido Vineyard Pinot Noir
Bien Nacido is a legendary Santa Maria Valley vineyard, and Pinot from there can be spectacular — but at an upscale seafood restaurant running steep markups, you're almost certainly paying a significant premium over retail for a bottle you could find at a good wine shop. Unless you have a specific producer and vintage in front of you that you know and trust, the markup risk is real.
Talley Vineyards Chardonnay + Cioppino-style seafood stew
Talley's Arroyo Grande Chardonnay has enough texture and body to stand up to a rich, tomato-forward cioppino broth without getting lost in it, and the wine's stone fruit and restrained oak keep it from fighting with the briny shellfish. It's the local-to-local pairing that this menu was built around.

Ciopinot isn't trying to be a wine destination — it's a solid seafood restaurant with a smart, regionally honest list that mostly does what it should. The Central Coast focus is genuine and the picks are good; just go in knowing markups are real and there's no magic by-the-glass rotation waiting to surprise you.

Tolosa is the rare tasting room that earns your full afternoon — focused, estate-driven wines in a proper setting, with the occasional Priorat curveball keeping things honest. If you're driving through SLO wine country, this one deserves more than a quick stop.

Finney's is a great craft beer bar that happens to have a wine list attached, and the wine list knows its place. If you're here for wine, you're at the wrong table — but if your crew wants beer and you need something in a stem, the Margerum Rosé will get you through the night.

Mistura earns its Wild Card badge by doing something most Peruvian spots don't bother with: building a wine list that actually reflects where the food comes from. The execution has room to grow — markups are real, the list is thin in spots, and specials aren't a thing — but the instinct is right, and that Tablas Creek bottle alone is worth the detour.

Nate's on Marsh is doing something genuinely worthwhile — championing its own backyard appellations in a region that deserves the spotlight.
