From what we can piece together, the list leans heavily on California — think the kind of lineup you'd expect at a Fairmont property where the brand does the buying and regional adventure isn't really the point. There's no evidence of a dedicated wine program with real personality or a buyer making interesting calls. The kitchen is clearly doing more creative work than whoever assembled the bottle list, with dishes like miso butterfish and Big Island goat cheese salad that deserve more interesting pours alongside them.
