The wine list at Bourbon & Bones lands with a certain confidence — 98 labels, heavy Champagne section, and a price ceiling that climbs to $1,198 if you're feeling reckless. It's a steakhouse list that knows exactly what it is: built for celebration tables and expense accounts, not discovery.
The Champagne section is the clear centerpiece, running from entry-level Moët at $36 up through Dom Pérignon P2 2004, Krug Grande Cuvée, and a Dom Ruinart Blanc de Blanc 2010 — real prestige labels with real prestige prices. Beyond bubbles, the list leans heavily on Chardonnay and Cabernet Sauvignon, which is exactly what you'd expect from a chophouse catering to steakhouse traditionalists. There's a Louis Latour Mâcon-Villages on the whites side that brings some Old World grounding, but the rest of the list prioritizes brand recognition over regional depth. If you came hoping for Barolo, Grüner, or anything remotely off the beaten path, adjust expectations now.
Thirty-three by-the-glass options is a genuinely impressive number, and the range in price — $15 to $125 per glass — tells you this program is trying to cover everyone from the business lunch crowd to the special occasion table. The Angeline Chardonnay anchors the value end at $15, which is honest and unpretentious. At the top, you're presumably pouring prestige Champagne by the glass, which is a flex not many Peoria restaurants can pull off.
Moët Brut — $36
Forty dollars for a bottle of Moët at a sit-down chophouse is about as close to fair as this list gets. It's not a discovery wine, but it's the right call when you want to start the table with bubbles without committing to a $150 bottle.
Bisol Jeio
At $57, this Prosecco from one of the Valdobbiadene valley's most respected producers gets overlooked every time someone's eyes drift toward the Champagne logos. Bisol makes structured, serious sparkling wine — not the sweet grocery store stuff. Great aperitivo move before a heavy steak dinner.
Kylie Rosé
At $60 a bottle, you're essentially paying a celebrity tax for rosé associated with Kylie Minogue. The wine exists. The markup reflects the name, not the liquid. There's better pink wine at that price point almost anywhere.
Laurent-Perrier La Cuvée Brut + Bone-in Ribeye
Laurent-Perrier's flagship is lean, high-acid, and toasty — it cuts through the fat on a ribeye in a way that a big Cab actually can't. It's counterintuitive but it works, and at $118 it's the most reasonable prestige Champagne on the list.
The Bottom Line
Bourbon & Bones has put real effort into building a Champagne list that would hold its own in a major city, but outside the bubbles section the list plays it safe and the markups are steep enough to sting. Come here for the occasion, not the exploration.
