Wingman Metrics
The wine list at Aubergine lands like a well-edited novel β dense, intentional, and clearly written by someone who actually reads. At 300β500 bottles deep in a room this intimate, the curation isn't showing off; it's doing real work alongside a tasting menu that demands serious wine. You're in Carmel, inside a boutique inn, and the list reads like it knows exactly where it is.
Burgundy anchors the old-world side with names like Domaine Leroy doing the heavy lifting β these aren't list-fillers, they're statement bottles. The California contingent is equally credentialed: Kosta Browne from the Sonoma Coast, Kongsgaard Chardonnay out of Napa, and Sine Qua Non pulling RhΓ΄ne-style weight from the Central Coast. The Santa Lucia Highlands and Monterey County get their due respect, which makes sense given how close the vineyards are. If there's a gap, it's that this list is built for occasion spending β there's no obvious value tier for guests who want to drink well without triggering sticker shock.
Given the tasting menu format, by-the-glass options are likely limited or structured around a curated pairing package rather than a traditional open pour program. The wine pairing experience is clearly the intended route here β and at this level, that's not a cop-out, it's a deliberate choice. If you're flying solo on the pairing, trust the sommelier; they're working with an unusually strong hand.
Kosta Browne Pinot Noir β $80β$120
Retail on Kosta Browne hovers around $60β$75, so even at restaurant markup this is one of the more approachable entry points on a list that otherwise skews toward trophy bottle territory. It also happens to be a natural fit for the seafood-forward tasting menu.
Kongsgaard Chardonnay
Most people at this table are scanning for Burgundy or Pinot, and that's exactly when you should order the Kongsgaard. It's a Napa Chardonnay that drinks with the kind of weight and tension most Cali Chards spend their whole lives pretending to have. Criminally underordered next to the Leroy bottles.
Domaine Leroy Burgundy
Not a knock on the wine β Leroy is legitimately extraordinary. But at a fine dining restaurant with a sommelier-driven list, you're going to pay a significant premium over an already eye-watering retail price. Unless you're celebrating something that warrants a four-figure bottle, this is one to drink at home or at a wine bar where the markup story is kinder.
Sine Qua Non + Seasonal Tasting Menu β Locally Sourced Seafood Course
Sine Qua Non's RhΓ΄ne-style whites β typically Roussanne or Chardonnay-adjacent blends β bring enough texture and aromatic complexity to stand up to the richer seafood preparations without bulldozing them. It's an unexpected move on a table that's likely trending toward Burgundy, and it works.
π₯ The Bottom Line
Aubergine is the real deal β a Michelin-starred room with a list that earns the badge rather than coasting on it. The prices are steep, but if you're already committing to a $200+ tasting menu, the wine program is worth leaning into.
Downtown Carmel Β· Carmel By The Sea Β· Traditional Italian Trattoria
Il Fornaio Carmel is a reliable Italian night out with a wine list that does the job without embarrassing anyone β but if you're looking to be surprised, you're in the wrong dining room. Send a friend here when they want comfort and a decent Brunello, not when they want adventure.

Fisherman's Wharf Β· Carmel By The Sea Β· Seafood and Classic American
Old Fisherman's Grotto isn't a wine destination, but it's not trying to be β it's a well-run wharf institution that stocks approachable California bottles at slightly inflated prices and lets the bay views do the heavy lifting. Send a friend here for the clam chowder and the sunset; just go in with calibrated expectations on the wine.

Fish Hopper is a reliable waterfront pour β not a destination for wine lovers, but not an embarrassment either. Go for the view, drink the Bernardus or the Roar, and save the deep cellar hunting for somewhere down the coast.

Downtown Monterey Β· Carmel By The Sea Β· Californian
Montrio is the rare restaurant where the wine list earns the same respect as the kitchen β regionally focused, fairly priced, and backed by staff who can actually help you navigate it. Add Tuesday's half-price bottle promotion and you've got one of the better wine nights on the Central Coast.

Dolores Street / Mission Ranch Β· Carmel By The Sea Β· American, Steak and Seafood
Mission Ranch is a beautiful place to have dinner, and the wine list will get the job done without embarrassing anyone β but it's built for the guest who wants a name they recognize, not the guest who wants to discover something. Go for the views and the prime rib; just don't expect the list to spark a conversation.
