The wine list at Agricola doesn't try to be everything, and that restraint is actually a good sign. It's curated with a clear point of view β producers that care about how grapes are grown, not just how they're marketed. For Princeton, where most wine lists default to safe Napa Cabs and Kendall-Jackson Chardonnay, this one stands out immediately.
The 80β130 label list leans into producers with intention β Donkey & Goat showing up here is not an accident; that Berkeley natural wine outfit doesn't land on lists that aren't paying attention. Teutonic Wine Company's Pinot Gris from the Willamette Valley and Birichino's Malvasia Bianca round out a California-Oregon axis that favors texture and interest over brand recognition. The list doesn't go deep on Old World or have a standout Burgundy section, but it doesn't pretend to β it stays in its lane and mostly wins. Gaps exist in Iberia and Italy, but what's here is cohesive enough that you won't feel lost.
Ten to sixteen options by the glass is a solid range for a restaurant this size, and the pricing β $12 to $18 β is honest for the market. The glass program reflects the same sensibility as the bottle list, meaning you're not stuck choosing between a generic Pinot Grigio and a mass-market Malbec. Rotation isn't confirmed as active, but even a static version of this program beats most of what's poured by the glass in central New Jersey.

Birichino makes wines that drink well above their price point, and Malvasia Bianca is an underrated white that brings floral lift and real texture. At this price range, it's the bottle you split without wincing.
Teutonic Wine Company Pinot Gris
Most people gloss past Pinot Gris in favor of Pinot Noir or Chardonnay, but Teutonic's Oregon expression is worth stopping for β it's serious, site-driven wine from a producer that doesn't mess around. Order it before someone else at your table talks you out of it.

With producers like Donkey & Goat and Birichino on the list, defaulting to whatever the unnamed house pour is would be a waste of the kitchen's effort. Step one rung up and you're in actual wine territory.

Donkey & Goat's skin-contact and low-intervention whites are built for vegetables β they have the texture and savory edge to match roasted roots or bitter greens without steamrolling them. This is exactly the pairing the restaurant was designed around.

Agricola isn't trying to be a wine destination, but it's quietly doing more interesting things with its list than most restaurants with twice the labels. If you care about where your food comes from, the wine list suggests someone in the building cares about where the wine comes from too β and in Princeton, that's worth something.
