Wingman Metrics
The glass-encased wine cellar is the centerpiece here — 300+ bottles backlit like jewelry in a Tiffany case. It's beautiful, it's curated, and it's expensive. This is a wine list built for corporate dinners and celebrations, not Tuesday night experimentation.
The list leans heavily into California comfort zones: Napa Cabs, Sonoma Chardonnays, and Paso Powerhouses dominate the reds. You'll find reliable crowd-pleasers like Cakebread and Austin Hope, plus some respectable European picks — Louis Roederer Champagne, Bertani from Italy. But the curation feels safe, almost algorithmic. There's depth in the $100+ range, but innovation and adventure are largely absent. If you know what you like and you're not paying, you'll be happy.
Eight-plus pours by the glass is acceptable but not exciting for a 300-bottle list. The range skews predictable — think Pinot Grigio, buttery Chardonnay, big Cab — with prices hitting $12-$20 per pour. No radical rotations, no seasonal shakeups, just reliable options that won't surprise anyone at the table. It's the wine equivalent of a greatest hits album.
Bertani Pinot Grigio — $44
A crisp, mineral-driven Italian that won't break the bank and cuts through rich seafood like a dream
Louis Roederer Collection 242
Most people grab the usual Veuve, but this non-vintage Champagne offers way more complexity and actually tastes like grower fizz at a corporate price
Austin Hope Cabernet Sauvignon
Paso's poster child for fruit-bomb Cabs is marked up like it's Screaming Eagle — you're paying $90+ for a $40 grocery store bottle
Cakebread Chardonnay + Crab Stuffed Shrimp
The rich, buttery oak meets sweet crab and shrimp in a decadent dance — it's cliché because it works
✔️ The Bottom Line
Eddie V's delivers a polished, professional wine experience with proper glassware and staff who know their bottles. But the markups are steep, the list plays it safe, and there's zero incentive programming to make you a regular. It's reliable when someone else is buying.

Bern's is a legend for a reason, and even this sparkling-focused slice of its list shows a house that genuinely cares about what's in the glass. The grower Champagne presence alone makes it worth a visit — just steer clear of the Korbel section and spend a few extra dollars where it counts.

The Rez Grill isn't trying to be a wine destination, but it's doing the casino steakhouse thing better than it has any obligation to — a real sommelier, a Thursday half-price night, and a list that knows its lane. Come for the ribeye, order the Jordan, and leave before you hit the slots.

Élevage is the kind of place that does California wine correctly without doing anything unexpected with it — the list is dependable, the setting earns it, and the Wine Spectator nod is deserved. Send a friend here if they love Napa Cab and a good steak; redirect the wine geeks to somewhere with more range.

Union delivers a reliable, California-heavy wine list that makes sense for a buzzy Tampa steakhouse with rooftop ambitions — just don't come looking for surprises. Send a client here; take a wine-curious friend somewhere else.

Ulele is a great restaurant that happens to have a competent wine list — not a wine destination that happens to serve great food. If you're in town for the waterfront, the smoked mullet dip, and a solid glass of California Chardonnay, you'll leave happy; just don't expect the list to keep up with the ambition of the kitchen. Wednesday's half-price wine night is genuinely worth planning around.

Boulon is a reliable wine stop in Tampa's growing Water Street corridor — the list is curated enough to respect, even if it rarely surprises. Send a friend here knowing they'll drink well; just don't send the friend who's hoping to find something they've never heard of.

St. Johns Town Center · Jacksonville · Steakhouse, Seafood
The Capital Grille Jacksonville is a dependable, well-run wine program that plays it safe at every turn — if you came here for discovery, you're at the wrong restaurant. But if you came for a proper steak, a knowledgeable server, and a California red that won't embarrass you in front of a client, this place delivers.

Cellar 55 is doing something genuinely interesting with its Spanish-leaning wine program in a city that didn't ask for it — and that takes guts. The markups keep it from true glory, but if you're eating steak in Amarillo and want something more thoughtful than the usual suspects, this is your place.

Connors is a reliable steakhouse wine list that handles the basics with confidence but never asks you to think too hard. Send your parents here — just steer them toward the Roederer and away from the Dom.
